Vancouver, against the serene mountain backdrop and close to the sea, its perfect harmony with nature has time and time again awed travelers. Its reputation as the best place to live on earth has drawn people from around the world to settle here. People with different backgrounds, religions, and ways of life come together on this picturesque land, creating a fusion of cultures through acceptance and understanding. Vancouverites and Vancouver’s vibrant lifestyle are unique in many ways; though the different parts are distinguishable, the sum of parts is what makes the city truly special. In the same way, Vancouver’s cuisine benefits from the rich blend of culture. Chefs embrace the diversity of culinary cultures from very different regions of the world, melding everything together to create something truly fresh and unique.
Waterfront
Situated next to the Pacific Ocean and surrounded by mountains and hills, Vancouver truly is a stunning place. The best place to observe its beauty would be from the heart of downtown. Downtown Vancouver best showcases what Vancouver is about. When taking a leisurely stroll down the waterfront, one can see the city’s beautiful architectures on one side, and the scenic mountains on the other.
Miku, sitting amidst this beautiful scenery, is a wonderful place to sit back, relax, and observe this stunning vista. It is also an excellent place for viewing boats in the harbour or simply just for people watching.
The Japanese restaurant specializes in aburi sushi, where a torch is used along with charcoal to heat the surface of the sushi. This is a unique approach to the traditional sushi. The flame from the torch melts the fish oil, and the rice underneath absorbs it. The sizzling sound of the oil, sweet aroma of the slightly heated fish, and the beautiful coloration tantalize the senses. Aburi sushi just melts in ones mouth, the complex yet intricate flavour balance so well with one another, making one reflect on how Vancouver is a city of different cultures harmonizing together.
Coming out from Miku, and walking along the waterfront, one will arrive at Bella’s Gelateria. Many high rise and offices surround the area, busy people walk hastily down the road, but the sight of a red ice cream cart outside Bella’s Gelateria stops many passersby. After a fantastic meal of aburi sushi at Miku, what could be better than enjoying some soft and creamy gourmet gelati?
Different from ice cream, traditional handcrafted gelato requires much more attention to create. Because gelato is made with less fat content, it requires more time to create, and thusly, gelato will have a much richer flavour and a softer texture. Embracing Canadians’ love for bacon, Bella’s specially crafted bacon chocolate gelato is an all-time favourite. They also offer other delicious gelato flavours such as sea salt, floral, and nuts. Since Bella’s Gelateria’s team has won first place at the Florence Italy Gelato Festival, one can expect every one of their gelati to be crafted to very high standards. One will then wonder where this delightful smell of food is coming from… Oh, it must be that food cart around the corner! Vancouver is home to one of the best food cart scenes in North America. Hundreds of colourful food carts roam the streets of Vancouver, serving everything from hot dogs, wraps, burgers, tacos, souvlakia, and more. Two of the most celebrated food carts that wander the streets of Vancouver are Japadog and Roaming Dragon.
Hot dog is one of the most popular fares in street food. Due to its easiness to prepare and countless possibilities of combinations, hot dog has become an ideal food for experimental fusion cuisines. This is how Japadog differentiates itself from standard hot dog. Using combination of familiar, yet unorthodox hot dog ingredients such as seaweed, fish roe, and Katsuobushi. Japadog successfully combined two opposite food cultures and turned them into a new sensation.
Though many food carts stay in certain locations throughout the day, Roaming Dragon is a food truck that stays true to its name. It does not have a fixed location or even standard hours of operation. Like a vagabond, Roaming Dragon roams the streets of Vancouver, serving modern Asian fusion fare to customers who are lucky enough to catch a glimpse of the truck.
West End
Other than being close to magnificent nature and having a temperate climate, Vancouver is also a bustling metropolis. In here one can find many top restaurants of Vancouver, one such example would be Market by Jean-Georges.
Opened by the world-renowned chef Jean-Georges, Market not only provide diners with exquisite dining experience, it also plays an active role of shaping Vancouver into a green city. Market is a member of the sustainable seafood program Ocean Wise. Like many of its members, Market concerns itself with using sustainable and fresh ingredients. Its 100 miles diet utilizes only local ingredients, by doing this, not only can the restaurant use the freshest available seasonal ingredients, it can also eliminate carbon footprints. With regards to food, Market creates refined European cuisines with hints of Asian influence.
Just a couple of blocks away from Market sits one of Vancouver’s most popular steakhouse Black + Blue. Black + Blue is a steak lover’s heaven. With that said, dry-aged beef will have a much stronger flavour and tender texture.
After a dinner at Black + Blue, one only needs to walk across the street to enjoy world-class dessert from Thierry. Pastry Chef Thierry Busset has experience working at two Michelin 3 stars restaurants. He is also regarded by Gordon Ramsay as one of the top pastry chefs in the world.
Opens until late at night, many dessert lovers gather inside Thierry for a late night treat. Sitting at the outdoor patio on a summer night while sipping a glass of cava is one of the best feelings in the world.
